Situated in the area of Borgo S. Antonio and covering an area
of roughly two hectares on an eastern slope of rich red earth Mario Zaghini
cultivates his passion for olives. The trees are mainly of the .Frantoio.
species with an average age of around 50 years.
Mario dedicates himself and he personally cares for his olive grove, this care
and passion can be seen distinctly in all the steps form the pruning of the
olive trees to the fertilising process through the use of organic and nitrate
composts and lastly to the harvesting of the olives which usually takes place
from end October to end November and is entirely done by hand.
The newly harvested olives are then placed in small containers and are taken to
the press.
The olive oil is obtained through cold pressing using the drip method and is
then bottled in litre bottles (or in 0,5 litre / 5 litre tin tanks).
The oil is used mainly by the Zaghini family for personal use although a part of
it is sold to friends and appraisers.
