ASPECTS OF HEALTHINESS OF EXTRA
VIRGIN OLIVE OIL
The Extra Virgin Olive oil extracted from the olive fruits (and not from the
seed) is one of the healthiest and easiest food oils to digest. It also aids in
the prevention of cardiac and intestinal pathologies due to its antioxidant
properties. The acidic level of the Extra Virgin Olive oil also aids in rising
the levels of .good. cholesterol. It is also perfect for frying as it is far
more stable at higher temperatures than traditional seed oils found in commerce,
although as with all oils it is far more healthy if consumed fresh or lightly
heated rather than fried. Last but not least it is the perfect dressing for the
always healthy salads.
TASTE AND COLOUR
The Borgo St. Antonio Olive Oil appears yellow - green in colour (the intensity
of the green depends on the harvest year as well as the mix of olives and may
vary from year to year). It is fruity with a touch of leaf green. To the palate
it is slightly bitter with a spicy hint of fresh olives while at the same time
being sweet and delicate. The aftertaste that is left is similar to a blend of
almonds and pine nuts.
SERVING SUGGESTIONS
The intense body and
flavour of the oil make it ideal for seasoning grilled fish or fish cooked with
tomatoes, potatoes and spices or even just simply boiled with a squeeze of lemon
like is the case for the typical Romagna fishes such as clams prawns. It
expresses all its fragrance and adds its flavour to pasta dishes such as
.tagliatelle. with sausage or meat sauces; the warmth of the pasta causes the
oil to release its typical scent adding to the experience. Also it blends
perfectly as a seasoning for grilled meats such as mutton, pork or veal; simply
mix the oil with freshly ground pepper and salt to taste and apply on the meats
before grilling. Obviously it is particularly indicated as a salad dressing for
all vegetables. It may also be served on it.s own simply spread over a slice of
toasted or grilled bread. Olive oil is very versatile and can be used to season
almost anything as your fantasy and taste dictate.
METHOD OF PRESERVATION
Store the oil in dark dry
places at room temperature, keep away from sunlight and sources of heat. To
maintain its scent and flavour keep the container well sealed after opening.
Also do not store the oil near other scented products as it is quite possible
that the olive oil will absorb the scents in a similar manner as a sponge would
absorb water.
METHOD OF SERVING
The Extra Virgin Olive oil should be served from dark bottles preferable wrapped
in tin foil or cloth to prevent light from deteriorating the oil.
